About each permit
Temporary Food Establishment Permit
$52 covers issuance and inspection for two weeks. A multiple temporary permit at $200 covers the entire calendar year, so it pays for itself at four events. Both carry the same $100 late fee. If you work more than three events a year in Williamson County, the annual option is the obvious choice.
Farmer's Market Permit
$100 a year with no late fee — the only permit on this schedule that carries none. The district quotes the statute it is bound by: under section 437.0065(c) the permit must run at least a year, may not exceed $100 to issue or renew, and must cover sales at all farmers' markets, farm stands and farms inside the jurisdiction. So $100 buys access to every market in the county, not one.
Amended Permit
$125 to $375 for a permit information update without a change of owner or business — a trading name change, for instance. Note what this is not: it is the fee for updating a permit you keep, not for transferring one you sell. A compliance inspection, meaning a full inspection, is $200, and an additional inspection requested by the establishment itself is $150. A permit reinstatement is $397 and a HACCP variance review is $395.
Food and Beverage Establishment Permit
Three bands on gross annual food sales: $258 up to $49,999, $515 from $50,000 to $149,999.99 and $773 at $150,000 or more. The district states what the fee buys — annual permitting plus the minimum inspections needed to verify compliance — so routine inspections are not billed on top, which is not true everywhere. A late renewal is a flat $100 extra in every band, so the penalty bites hardest on the smallest operator, where it is a 39 per cent surcharge. School food establishment permits are $258.
Food Establishment Plan Review
$882 for a standard review, $1,000 expedited — the single largest food-related fee in this dataset, above Brazos County's $700 for a medium or high risk new city permit and well above Fort Worth's plan review. It is payable before construction, not at opening, so it lands in the fit-out budget rather than the trading budget. The $118 premium for expedited handling is small relative to the base fee, which makes expediting worth considering whenever an opening date is contractual.
