What does a restaurant need in Collier County that other businesses do not?
Collier County Local Business Tax Receipt
Collier County Code § 126-111(b) bars engaging in any taxed business, profession or occupation "anywhere in Collier County, including within municipalities" without a receipt from the Collier County Tax Collector, and requires a separate receipt for each business location (situs). The Tax Collector's Business Tax Receipts page states that any business operating anywhere in the county, even inside the city limits of Naples, Marco Island or Everglades City, must have a county business tax receipt; that "Business tax receipt fees vary with the kind of business"; and that renewal notices go out on June 30th. The amounts here are as set in the Code text (Ord. No. 07-51, adopted June 26, 2007), current on Municode as of the October 1, 2026 version. The Code names restaurants, cafes, snack bars and take-out food service in § 126-131, contracting in § 126-132 and retail stores in § 126-149 (which excludes restaurants and cafes from "retailer"). For salons, § 126-147(c) states that its supervision exception does not exempt individual cosmetologists from paying for an individual local business tax receipt, the $30.00 individual professional tax in § 126-147(a). The § 126-148 service-business schedule is listed as published; the Tax Collector classifies each business into a category. Under § 126-113(g), a receipt can be transferred to a new owner for a fee of up to 10 percent of the tax, not less than $3.00 nor more than $25.00. The Tax Collector's page also states that commercial businesses in unincorporated Collier County need zoning certificate approval and "a fire inspection from your local fire department district". Under § 126-111(c), the receipt does not exempt anyone from any other required permit or license.
Grease Trap and Interceptor Maintenance (Food Service Establishments)
The Collier County Public Utilities Food Service Establishments page states: "All food service establishments must operate and maintain grease removal devices, such as grease traps or interceptors. Cleaning and service records must be retained for a minimum of three years and made available for County inspection upon request." Per that page, accumulated grease and food waste must be pumped at least every 30 days from a grease trap (usually inside the building or under the sink) and at least every 90 days from a grease interceptor (usually below ground outside), every cleaning must be documented for inspection by County staff, grease waste may be disposed of only at approved treatment facilities, and no chemicals, enzymes, emulsifiers, bacteria or other grease additives may be used without county approval. The Industrial Pretreatment Program page states that the program is authorized by the Florida Department of Environmental Protection and Chapter 134, Article IX of the Collier County Code of Ordinances, and that the program inspects each permitted facility at least once a year. Installing a new grease trap is a separate building-permit item ($50.00 per grease trap under Resolution No. 2025-231 § P.7).
Public Food Service Establishment License
Banded by seats, and each band is four separate charges added together — a basic fee, a capacity fee, an epidemiological fee and a HEP fee. 1 to 49 seats is $262; 50 to 149 is $273; 150 to 249 is $294; 250 to 349 is $315; 350 to 499 is $336; 500 or more is $357. On top of any of those, a first application or a change of ownership adds a $50 application fee, and a late renewal adds $50. A non-seating permanent establishment pays $242 and a mobile food dispensing vehicle $347 — a food truck costs more to license than all but the largest restaurant. Two things catch people: statute caps the aggregate license fee at $400 per establishment, but the $50 application and $50 delinquency fees sit outside that cap; and applying within six months of the annual renewal period halves the first year's fee, while applying earlier than that does not. A restaurant operating inside a hotel needs its own license.
